I made this last week and it was awesome. Super easy and really good. It's a great fall/winter meal. This will be a regular for sure.
I got this recipe from another site and modified it to my taste.
Ingredients:
6 Sausages - any kind you want to use. I like Mild Italian
1 pound potatoes
1/2 pound carrots
1 large onion
6 garlic cloves
2tbsp olive oil
1/2 broth - chicken or beef
Peel the potatoes, wash and cut into pieces
Peel onion and cut into wedges
Peel garlic
I use the bagged carrots so they are ready to go.
Place it all in a big roasting pan. Pour broth over veggies. Toss with salt and pepper.
Cover with aluminum foil and place in a preheated oven.
Bake at 450F for 40 minutes.
Now it's time to brown the sausages. You don't need to cook them all the way, they will do that in the oven. Just get them browned.
After 40 minutes, check veggies to see if they are done. If so, cut sausages in half and place them on top of the veggies. Put roasting pan back in the oven, uncovered, for 15 minutes. At that time take out and turn the sausages. Put back in the oven and continue baking for another 15 minutes.
Enjoy!
